According to a recently submitted permit application, the New Braunfels coffee shop Gruene Coffee Haus is planning a new construction project at its address at 1720 Hunter Road — where it’s neighbored by establishments such as the American food restaurants Gristmill River Restaurant & Bar and The Birdhouse, and the bar Gruene Grove.
Kelly Hall tells What Now San Antonio, “In 2007, my dad (Rick Shuck) purchased our little coffee shop in Uptown Gruene, and our family business began. A few years in, I made the decision to begin roasting our own coffee beans in haus. I felt this would be the artisan twist we needed to grow and felt it truly represented historic Gruene. I prayed it would entice visitors to walk up to our end of town, check it out, and enjoy a cup of coffee. We have now been open for 18 years, and by golly, it worked!”
“We have outgrown our little roasting space, and with huge appreciation to our property owner and the city of NB, we are building a new roasting facility. The new building will be located directly behind the coffee shop and house a larger coffee roaster, a tasting and training room, and tons of workspace to allow us to continue to grow and provide premium, specialty coffees to our customers. Visitors to Gruene will be able to see how coffee is roasted and purchase freshly roasted beans to enjoy in their own homes,” she continues.
Additionally, the filing reveals that construction is scheduled to begin on October 24 and finish on November 24, 2026.
Gruene Coffee Haus offers a full espresso menu, gourmet drip coffee selections, 24-hour cold brews, a variety of frappe flavors, smoothies, Italian sodas, craft beer, and mimosas. Snack options from local establishments such as Wildflour Artisan Bakery, Evie & Me, and NB Tortilleria are also available for purchase.
