The growing national coffee chain Scooter’s Coffee will soon be opening an Austin location, according to recent public records. The restaurant will be located at 821 W. State Highway 71. This location will be run by Lisa M. Boe.
The records in question state that construction will consist of a “New construction of drive-thru only coffee kiosk”, costing an estimated $650,000.
Founded in Bellevue, Nebraska by Don and Linda Eckles in 1998, Scooter’s defines their guiding principles of success as: “find a great location and stay committed to high-quality drinks, speed of service, and a BIG smile. Scooter’s Coffee is fortunate to have over two decades of success due to its commitment to the original business principles and company core values.”
Like most fast-casual coffee chains, Scooter’s specializes in hot and cold coffee drinks, along with smoothies, juices and a small selection of food such as cookies, muffins, burritos, and sandwiches.
No opening date has been announced.
