Slim Chickens Building in San Marcos

According to recent public records, a growing chicken fast casual brand is building in San Marcos.

Records examined by What Now reveal that Slim Chickens will be conducting “minor renovation to an existing restaurant” at 4002 IH 35 South Frontage Rd.

The restaurant will cost an estimated $150,000 and cover 4,097 ft 2. Construction is estimated to reach completion in November 2026.

When asked what inspired his involvement with Slim Chickens, Franchisee Dan Mcgrath of Big Star Hospitality and Big Star Chicken told What Now, “We really like that they require money to be put back into the community,” sharing that 7-10% of profits are donated to local programs.

For readers who are unfamiliar with the business, Slim Chickens offers a brief introduction on its website: “Our mission was (and is) simple: to make the best hand-breaded chicken tenders using only the freshest ingredients, served in a friendly atmosphere where people can relax and feel at home.”

In addition to chicken tenders, the Slim Chickens menu boasts chicken sandwiches, wraps, salads, and sides including macaroni and cheese, fries, and potato salad.
