According to recent reporting in The Business Journal, Fat Rosie’s Taco & Tequila Bar, a Mexican restaurant chain based in Chicago, is expanding into Florida for the first time with a new location in Orlando.
The restaurant will open in early 2026 in Waterford Lakes Town Center, occupying 6,675 square feet of leased space and likely creating dozens of jobs. Fat Rosie’s currently operates seven locations, all in Illinois.
“Orlando’s booming population, thriving tourism and reputation as an emerging foodie hotspot make it the perfect fit for our first Florida location,” John Iannucci, CEO of Fat Rosie’s parent company Mas Mex, told Orlando Business Journal in an email response.
“The city’s diverse community and adventurous energy align perfectly with Fat Rosie’s lively atmosphere and authentic menu, creating an ideal setting to bring our regional dishes and signature cocktails to new guests.”
No opening date has been announced.
