Pinyon, a new Mediterranean-inspired restaurant, is coming to Old Town this fall.
The restaurant is opening at 7355 East Scottsdale Mall, along the lawn of Scottsdale Civic Center. Slated to open at the end of November 2025, Pinyon is a new concept from Hi Noon Hospitality, the name behind Buck & Rider, which has three locations in Phoenix, Scottsdale and Gilbert, and Ingo’s Tasty Food, which has three restaurants in Phoenix and Scottsdale.
Hi Noon Hospitality founder, Adam Strecker, describes Pinyon as more than just the typical Mediterranean restaurant. Rather, it’s designed to encompass the “best of the best” of the entire Mediterranean region. “When a restaurant designs a Mediterranean concept, they typically turn to Greece or Southern Italy. But we wanted to source from the entire Mediterranean basin from Spain to Morocco,” he says. The region, after all, encompasses 21 different countries from Lebanon to Croatia. With all those different cultures, there’s a bounty of ideas.
Strecker received culinary inspiration during a six-week trip through the Mediterranean with his wife, traveling through Turkey, Malta, Morocco, and beyond. “We sourced flavors from Valencia, Barcelona, France.”
What he realized is that many of the dishes shared a similar DNA. “All the foods really translated well to each other. If you look, the food from Turkey and Spain and Greece are all similar.”
With that in mind, Strecker and his team set out to create a “greatest hits” of items that represent the best of the best. “When you’re in Spain, you have to have Iberico ham and pan con tomate. In Lebanon and Israel you seek out some amazing hummus. Southern France will have a phenomenal tuna nicoise, and an the Amalfi coast you’ll find linguini and clams.”
Meat, fish, and even vegetables will be grilled on a Josper, a large, handmade indoor grill to recreate the styles of outdoor grilling. Pita bread will be made in-house, and diners can expect a large selection of dips, salads, pastas, and more.
Strecker wants Pinyon to be more than a restaurant — he wants it to be a journey through the Mediterranean without the plane ticket. “If you’re flying to Europe, you’re going to want to eat well. So let’s bring it to Scottsdale.”
