Pho Gyu Working on Two New Los Angeles Sites

Pho Gyu, a modern Vietnamese restaurant specializing in wagyu beef pho and contemporary noodle dishes, is getting ready to expand in Los Angeles County with two new locations.

One is planned for 8266 Firestone Boulevard in Downey, within the Downey Gateway shopping center, and another is listed as “coming soon” in Whittier at 15265 Whittier Boulevard, according to the company’s website. The company’s Downey location is tied to a liquor license transfer from The Hummus Factory, which currently operates at the Firestone Boulevard address, according to public records. The Whittier site, on the other hand, will move into the former home of Burgerim. It is unclear when either of these Pho Gyu locations is expected to open.

Owned and operated by Jae Chang, Pho Gyu is expected to bring its signature wagyu beef pho, rice dishes, and banh mi sandwiches to both markets once open. The restaurant was founded in Ventura and currently operates two locations in Southern California: one in Ventura and another in Koreatown. The concept blends traditional Vietnamese recipes with premium wagyu beef and slow-simmered broths, emphasizing a modern and accessible dining experience. The brand’s growth into Downey and Whittier marks its continued expansion across Los Angeles County, as well as its commitment to serving neighborhoods beyond central Los Angeles.

The restaurant’s menu centers on pho varieties made with a 12-hour wagyu bone broth, such as the Wagyu Beef Pho, Rib Pho, and Spicy Miso Wagyu Pho. Other popular options include vermicelli bowls, rice plates, and banh mi sandwiches featuring proteins like wagyu beef, chicken, and spicy pork. Customers can also expect appetizers, including crispy wings, fried and steamed dumplings, and spring rolls.

Vegetarian and gluten-free options are available, including a miso vegetable pho and vegetable fried rice. Pho Gyu’s approach emphasizes the use of high-quality ingredients and consistency across all locations. According to the company’s website, its dishes are “freshly prepared in-store” using top-grade ingredients and served in a casual, welcoming setting.

Both new locations are expected to contribute to the region’s growing demand for modern Asian dining concepts. With its expansion into Downey and Whittier, Pho Gyu is positioning itself among Los Angeles County’s evolving lineup of casual, high-quality Vietnamese restaurants, bringing its wagyu-driven menu to a broader customer base.
