Inka Grill, a restaurant serving authentic Peruvian cuisine, is opening in Altamonte Springs.
According to chef/owner Percy Rojas, the restaurant will open at 520 W State Road 436 in the spring of 2026.
A native of Peru, Rojas grew up in his family’s kitchen, which created a lifelong passion for cooking. At first, Rojas dreamed of entering the medical field, but decided to embark on a culinary career instead. He enrolled in a cooking course, then worked at a French restaurant to hone his techniques. After years of working his way up in professional kitchens in Peru and Costa Rica, Rojas moved to Orlando, and then to Miami, where he created food at some of the city’s best restaurants. He decided to open his own restaurant and chose Roanoke, Virginia as the location of his first restaurant for its growth potential.
Inka Grill has now grown to five locations throughout Virginia and in North Carolina. When it opens, the Altamonte Springs location will be the first in Florida.
The restaurant offers classic Peruvian dishes such as lomo saltado (sauteed steak bites with tomatoes, cilantro and onions served with French fries and white rice), tacu tacu con mariscos (seafood in a cream sauce with rice and beans), chicken chaufa (chicken fried rice), ceviches, and soups.
