Something interesting is about to happen at Summerlin Takeout. The commercial kitchen and restaurant incubator will soon welcome Bizarre Bites, a new concept from Ethan Greer and Jeffrey Yancey. It’s working toward a December/January opening, which means you’ll be able to check it out quite soon.
There’s just one hitch: we don’t know exactly what’s going to be on the menu yet. What Now spoke to Ethan Greer on Friday about plans for Bizarre Bites; Greer said those menu details are still under wraps.
“But basically,” Greer said, “it’s going to be things like burgers and ice cream—but with a twist of molecular gastronomy.”
To be honest, we don’t totally know what that means. (Interesting! Bizarre, even?)
The two restaurateurs behind Bizarre Bites bring decades of hospitality experience to the table. “I’ve been in kitchens for most of the last 35 years,” Greer said, “and my partner has for about 9. We both have plenty of experience. And when it comes down to it, we just wanted to do something for ourselves.”
In addition to launching at Summerlin Takeout, Bizarre Bites will be making its way in the social media space, putting together cooking tutorials for Youtube and other platforms—because, Greer says, “everything we do is going to be easily replicated at home.”
And after that? What Now asked. Are there plans to move into brick and mortar?
“Yes,” Greer said. “If everything goes well, our plan is to get a location on the Strip.”
