With Love, Always may be booming with openings popping up all over Nevada, but the popular smashburger brand isn’t laser-focusing its love on The Strip just yet. Instead, the beloved Vegas brand is opening its next location in the Red Rock Casino in Summerlin next Spring, according to the Las Vegas Review-Journal’s Neon outlet.
“We’re just so happy to join the Stations family and the Red Rock Casino family,” co-owner Drew Belcher said in a conversation with What Now Las Vegas.
“We looked up to the Fertitta family since we were little, and we’ve been pitched to go on the Strip super fast and just open up a big flagship, but we thought opening in our local neighborhood first would just do the brand and the product justice.”
The product itself stands alone. Known for its thinly sliced medallion onions atop juicy double patties smeared with the one-of-a-kind “Love” sauce between Martin’s Potato Rolls, With Love, Always keeps it simple with a multitude of thoughtful considerations.
“We take something super simple, but take it very seriously,” Belcher said.
“We use super high-quality beef first and foremost, up or two-thirds is prime grade. It’s fresh, never frozen, premium black angus. Martin’s Potato Rolls is the bun that we use. It’s just three burgers on the menu. We fry the French fries in beef tallow. French custard soft serve. It’s a very simplistic menu, but we take it very serious.”
One of the items that sticks out of that serious and simplistic menu for Belcher is the SOB, or Smashed Onion Burger.
“It’s just like an Oklahoma-style fried onion burger with thinly sliced medallion onions smashed into the patty. If you like onions, it gives it a very umami onion mouth feel and taste profile. Very, very good if you like onions,” Belcher said.
Belcher started the smash burger brand in a parking lot as a pop-up in 2021 with his brother Kevin Whelan and social media food personality, Damian Ocampo. With Love, Always opened its first brick-and-mortar location in Centennial Hills in 2024. The brothers are also the founders of Sorry, Not Sorry Creamery. The scoops and smash brands have both blossomed throughout the Valley, with multiple openings. Opening seven locations in three years, the creamery is now making its way to Southern California.
“We take very simple concepts and scale them as quickly as possible; that’s always been the goal,” Belcher said.
“The only way to scale really fast is to nail down the menu first,” Belcher said.
You’re not going to get a turkey burger or a fried chicken sandwich at With Love, Always anytime soon. The brand is keeping its roots strong with its love letter to its neighbors and city.
“We’re all Vegas guys,” Belcher said.
The new With Love, Always is expected to open at the Red Rock Casino in Summerlin at 11011 W Charleston Blvd. by May 2026.
