Chef Jason Dady Restaurants is announced the opening of Umai Mi, set to debut Dec. 10 at the Food Hall at Bottling Department at the historic Pearl. Located at 312 Pearl Parkway, Building 6, Unit 107, the restaurant is a love letter to the bold, bright, deeply craveable flavors that first sparked Chef Dady’s love for modern Asian fare.
The idea for the concept first came to life in 2014, when Chef Dady opened the original Umai Mi, a restaurant inspired by the dishes he cooked relentlessly at home. The menu was playful and wildly creative, but over the years — through refinement, travel and countless bowls, broths, herbs and sauces — a new vision took shape. This pop-up at Pearl brings that evolution to life: a tighter, more intentional menu where every bite carries purpose, all centered around the restaurant’s signature dish—the Bánh Mì.
“We’re thrilled to bring Umai Mi to the Food Hall at Pearl, a place that celebrates culinary creativity and community,” says Chef Dady in a statement. “The Bánh Mì represents what I love about cooking, balancing textures, fresh herbs and layering flavors in a way that makes every bite exciting. At Umai Mi, it’s not just a menu item, it’s a dish that defines who we are.”
The signature Bánh Mì sandwiches feature Pullman Market Crackling Demibaguettes, bright herbs, crisp vegetables and a choice of protein, including lemongrass chicken, ginger soy beef or shrimp. Guests have the option to make their order Saigon Style, adding housemade pâté. Beyond the signature sandwiches, Umai Mi offers a Bún Bowl with vermicelli noodles, fresh veggies, peanuts and a protein, all drenched in the House Nuóc Chãm, and Coconut Thai Curries, slow-simmered blends of coconut milk, aromatics and Thai basil available in Red, Panang or Green varieties. Starters include Japanese-Inspired Deviled Eggs, Crispy Shrimp Rolls, Summer Rolls, Sweet & Spicy Wings and a family favorite, the Crispy Rice Salad.
Beverages at Umai Mi include Bubble Tea in taro, mango milk tea or matcha strawberry flavors and served with classic boba pearls, alongside Thai iced tea, Japanese soda and more. Desserts include the internet favorite Sweet Hard-Shell Ice Cream and Mochi Ice Cream.
This opening comes on the heels of Chef Dady’s recent expansion at The Rock at La Cantera with Ice Ice Dady and Lil’ Bros BBQ Shack, and follows his appointment in July 2025 as one of six chef ambassadors representing San Antonio as a UNESCO Creative City of Gastronomy. With Tre Pizzeria now open at San Antonio International Airport and Mexico Ceaty set to debut in early 2026, the Jason Dady Restaurant Group continues to elevate and celebrate San Antonio’s culinary landscape.
