The new yet-to-be-announced concept is set to open in the former home of Jtown Pizza Co., according to a recent liquor license application. While an exact opening date and additional details have not been announced, the group has submitted a Type 47 On-Sale General Eating Place liquor license, indicating the restaurant will serve both food and alcohol. Customers can expect a combination of craft beverages and casual dining offerings in the space.
Bedrock Restaurant Group, a California‑based restaurant and hospitality company, is active in the state’s business registry as a “brewery and restaurant” entity, with Sam Ghadiri serving as CEO and president. The group has been involved in local operations, including the acquisition and consolidation of Laughing Monk Brewing and Faultline Brewing.
Under Bedrock’s ownership, Laughing Monk expanded into former Faultline locations in Sunnyvale and Scotts Valley, maintaining many of the original beers and menu items while broadening its offerings. This will be an excellent landing space for Bedrock Restaurant Group in Japantown, a neighborhood known for its mix of retail, dining, and cultural destinations.
