Opening at SkyBeach Resort: Luma

“If St. Pete’s a place for the dreamers, creatives, and doers to find their groove, SkyBeach Resort is where they can finally unwind,” says St. Pete’s SkyBeach Resort on its website. “Completely unique, a little eclectic, yet always timelessly cool, we’re a haven for seekers of good times and great vibes.”

In pursuit of those good times and great vibes, the resort is now preparing for the January launch of Luma, a brand-new Mediterranean restaurant helmed by Executive Chef Ryan VanDusen.

“Luma is where golden light meets with the timeless spirit and soulful flavors of the Mediterranean, warmed by the St. Petersburg sun,” says the Luma website. “Centered in vibrancy and ease, Luma brings coastal flavors and locally inspired ingredients to life—rooted in effortless hospitality and genuine connection. Inspired by warm days and the union of sea and sky, Luma is a place to gather, share, and celebrate—guided by nature, illuminated by light, and grounded in warmth.”

A menu is already viewable on the site, featuring Mezze like Roasted Garlic Hummus, Grilled Octopus, and the Mezze Feast: a smorgasbord with tzatziki, baba ghanoush, hummus, pickles, olives, and grilled naan. A menu titled “Feast” features entrees like Mediterranean Roasted Whole Fish, Moroccan Spiced Eggplant, and Red Wine Braised Short Ribs with olive whipped potatoes, blistered cherry tomatoes, and charred green onion.

“Complementing the menu will be curated cocktails, like the Sultan’s Sip, a mix of bourbon, date syrup, saffron, and cardamom bitters, and the Casablanca Cooler, a vodka concoction flavored with Moroccan mint tea and honey,” reported St. Pete Rising back in the fall (at the time, an opening was planned for this month).

What Now reached out on Wednesday to Chef Ryan VanDusen to ask about plans for the opening and more details regarding the menu. Chef VanDusen was not immediately available for comment on Luma.
