The Tennessee Department of Health conducted a routine inspection at Extreme Hot Wings on December 22. The assessment report noted that the eatery had violated several food safety codes. It is expected to correct the violations before reinspection.

Extreme Hot Wings serves sandwiches, tenders, fried chicken, and combo meals. According to the inspection report, the restaurant was found non-compliant with the food safety regulations. Violations found during the inspection include:
- The person in charge was observed washing and rinsing a sauce bowl.
- The report noted that the owner was asked about the swai found in the freezer that was not listed on the menu. The owner said catfish was unavailable from the supplier, and customers were asked before substituting swai.
- No approved sanitizer was available at the three-compartment sink.
- Chicken wings were seen held at 47-58°F and were found to be par-cooked the previous night of the inspection, around 9 PM. It was then stored in a prep cooler. The wings were embargoed, and proper cooling procedures were discussed.
- The cheesecake that was stored in the Pepsi reach-in cooler did not have a date marking.
- An unlabeled chemical spray bottle containing a yellow liquid was found under the triple sink.
- A personal phone was observed on a prep table.
- Heavy grease buildup was seen on the fryer basket.

- Old cardboard boxes were observed lining the shelf beneath the prep table where sauces were stored.
- The prep table cutting board had deep gouges.
- A to-go bag was seen being used as a stopper in the triple sink.
- A rolling cart that is used to hold flour was seen with heavy grease buildup.
- No backflow preventer was installed on the hose attached to the mop sink faucet.
- The wall behind the sauce table had major food debris buildup.
- The most recent inspection report was not posted.

Follow-up Inspection

According to the footnote of the inspection report, failure to correct risk factor items within 10 days and repeat violations may result in the suspension of the food service permit of the eatery.
The restaurant is expected to correct all the violations ahead of the reinspection, including items that are identified as immediate health hazards, to avoid closure.
