Carrot Express to Open a Hialeah Gardens Location

Carrot Express, the healthful restaurant that specializes in juices and power bowls is opening a new location in Hialeah Gardens.

According to Franchise owner Alex Maduro, Carrot Express will open at a brand new shopping center at 7000 Hialeah Gardens Boulevard by the end of spring 2026.

Maduro tells What Now Miami that the 1,858 square foot restaurant will have a new, fresh look to it, as Carrot Express starts its metamorphosis to being known as, simply, “Carrot”. Maduro shares that most of his customers — and even his family — have been shortening the name to “Carrot”, for a while, now. Fans of its wraps and juices can rest assured that all their favorite menu items will remain unchanged.

Customer favorites include loaded sweet potatoes that are nutrient dense and satisfying, the Paradise Bowl, made with organic Brazilian açaí topped with granola, strawberries, blueberries, banana, pineapple, and coconut flakes, drizzled with honey; and the restaurant’s signature carrot cake made with avocado oil, fresh carrots, sweet raisins and crunchy walnuts.

Carrot Express is a Miami-born and bred restaurant that truly speaks to South Florida’s healthy, sun-kissed lifestyle. In 1993, Mario Laufer opened the first Carrot Express inside a Miami Beach gas station. The little spot quickly gained momentum, fueled by its menu of healthy, high-quality bowls, wraps, juices, and all-day breakfast. Today, there are more than two dozen locations, with the brand recently expanding into New York City.

Carrot Express also strives to be a good member of the communities it serves through giving, fundraising, and its Carrot Cares initiative that fosters a culture of inclusivity to both employees and guests.
