Only Chicken serves classic Southern fried chicken, chicken tenders, and a signature spicy chicken sandwich. According to the report, the violations noted were:

  • The employee health policy was not available on-site. The person in charge (PIC) was not familiar with the policy requirements, the report said. The PIC said that a copy of the policy in the staff’s preferred language would be emailed the following day.
  • An employee was seen handling raw chicken and then placing clean dishes into storage without removing contaminated gloves or washing hands. The employee was asked to remove the gloves, wash their hands, and return contaminated dishes to the dishwashing area.
  • Raw chicken was seen stored above vegetables and dressing in a prep cooler, posing a cross-contamination risk. The PIC corrected the issue by relocating the raw chicken below ready-to-eat foods.

  • Yellow rice that had been held in a cooker for 2.5 hours was measured at 110°F, below the required minimum hot holding temperature of 135°F. The PIC embargoed and discarded three pounds of the rice.
  • Excessive food buildup in the gaskets of the grill cooler was observed.
  • Major grease buildup was noted on the oven hood, needing thorough cleaning to maintain sanitary conditions and reduce fire risk.
