Beloved Austin restaurant Bartlett’s is preparing for an expansion in Austin. According to coverage by the Austin American-Statesman, owner Trey Wolslager, who purchased the restaurant in 2023, is partnering with McGuire Moorman Lambert Hospitality to bring Bartlett’s to 301 W Riverside Drive, where it will open in the former Threadgill’s space.
“The new location will continue the tradition of the original, which Bartlett purchased from the Hillstone Restaurant Group and operated until his death in 2013,” the American-Statesman coverage says. “The restaurant will feature a live-fire grill and sell American chophouse classics like steaks, pork chops and roasted chickens, with famed starters like cold-smoked salmon and spinach-artichoke dip. The new location will also feature rotating specials, which will give the MML culinary team an opportunity to flex its creative muscle.”
In its current home, Bartlett’s offers a dinner menu featuring entrees like Oven Roasted Chicken with apricot glaze and cashew cauliflower quinoa; Barbecue Pork Ribs with Hill Country barbecue sauce and coleslaw, and hardwood-grilled Cold Water Salmon. There are also Burgers & Sandwiches like the Chimichurri Steak Sandwich (arugula, mayo, cole slaw, French Fries) and the Hickory Burger (applewood-smoked bacon, chopped cheddar, onion, hickory sauce).
“We believe in the nobility of service and in the dignified pleasures of dining well. We believe that for our restaurant to live up to its name, it must be restorative,” says the Bartlett’s website. “We source top-quality meats, seafood, vegetables, and cheeses. We hand-cut fish and steaks, freshly grind chuck for burgers, and make our soups, buttermilk ciabatta, mustard, and two-week pickle relish from scratch. And we obsess over the details of getting it right every time.”
The new restaurant will be jointly operated, the American-Statesman says, with MML Hospitality handling service and culinary operations.
