An experienced baker is helping bring a new bakery concept to the area.
From their social media, Morning Star Bakery and Cafe is a new concept set to arrive at 1070 Ghent Road, Suite 210 in Akron. This is just west of the Summit Mall. General manager and chef Sarah Carcioppolo told What Now Columbus the estimated opening date right now is April 17.
The new concept will be more of an upscale bakery, serving both breakfast and lunch. With healthy ingredients, some of the items to be served include breakfast sandwiches, grain bowls and salads. On the baked goods side, fresh bread, croissants, Danishes and pastries will be on display.
“We’re trying to keep it as local as we can,” Carcioppolo said. She added some of the inspiration for her baking came from traveling to places like Japan and Copenhagen.
The cafe is coming to the corner of Ghent and N Cleveland Massillon roads, close to Vaccaros Trattoria. This is just off of the Ghent Road Interstate 77 exit, and is a short drive from the Summit Mall. Also nearby is the unincorporated community of Ghent, with restaurants like Bake Shop of Ghent and Dean Martin’s Lanning’s Restaurant.
Carcioppolo was the owner of Dancing Desserts had been in Wadsworth at 1321 Sharon Copley for around 10 years. The space was listed as closed as of February 2026. There, sweets were served like cheesecakes and scones, Carcioppolo is bringing some of her baking knowledge to Morning Star.
When speaking with co-owner Eric Bosshard, he said the opening date will likely be April 17, but this depends on how quickly the opening process moves. For more information on Morning Star Bakery and Cafe, visit their Instagram page.
