Pinky’s Westside Grill has plans for a new location in Plaza Midwood, a permit filing indicates. This location, heading to the former Grinning Mule location at 1109 Morningside Dr., will mark the third for the brand.

Andy Cauble and Greg Auten are behind the concept, which currently has spots in Charlotte and Huntersville. Cauble told What Now Charlotte that they are targeting a late summer opening.

They are aiming to have a patio at the spot, and they have plans for only minor renovations to the bar and dining room space.

“We love the fact that it’s in an old garage and it has super cool architecture to the windows in the front of the building,” Cauble said.

The brand offers specialty burgers, hot dogs, salads, tacos and sandwiches, including build-your-own burger options.

Cauble said he envisions five locations for the brand in the future, depending on how this opening goes.

“We’re excited. Extremely excited,” Cauble said. “It feels fresh to be going into Plaza Midwood, and we really hope the people enjoy the neighborhood vibe we’re going to have.”
