D’Rose Gastrobar, a new “Modern Gastrobar with Colombian DNA,” will join the Ybor restaurant community this summer.

Opening at 2238 E Seventh Ave, D’Rose will be “a great setting for people to come have a great experience,” chef and owner Victor Lopez told What Now on Thursdsay. “We emphasize a lot of small bites, with a shareable menu, and a big focus on the bar. We’re going to have a huge wraparound bar in the middle of the dining room.”

The specifics on the menu are still under wraps as the restaurant works towards its opening, with June as the target for launch.

“A Modern Gastrobar with Colombian DNA— where flavor, Design, and energy come together. A modern expression of culture – refined, social, and unapologetically Latin. Because – THIS IS ALSO LATINO!” reads a description of the restaurant provided to What Now by Chef Victor. “For too long, ‘Latino’ has been defined by clichés — color, rhythm, and folklore. D’Rose unveils a side the world has yet to see: elegant, creative, and cosmopolitan. Inspired by the Creator, we transform Latin culture into art — expressed through flavor, design, and experience. Guided by the spirit of the Explorer, we invite the world to rediscover what it truly means to be Latino. D’Rose embodies our elevated essence — modern, proud, and unapologetically Latin. You thought you knew Latinos? This is also Latino.”
