Laika Cheescake is ramping up for ongoing expansion. The cheesecake and espresso shop is planning to open its next location inside the TPC Retail & Office at 2230 TPC Parkway, Suite 1103, according to a recently filed permit.
The permit details that construction on the 1,471 square foot $200,000 project is slated to start at the tip top of May and wrap up before the middle of November this year. While the timeline could be subject to construction and permitting delays, the hope is that the new sweets shop will open before the end of the year.
“We offer gourmet cheesecakes made from scratch in our kitchen, using high-quality ingredients. Our desserts cater to different tastes and dietary needs, including sugar-free, gluten-free, and keto options,” the Laika Cheesecake website reads.
“Additionally, we serve signature espresso drinks and a variety of crafted beverages such as matcha, tea, and homemade lemonades.”
At the helm of the growing brand are founder Anna Afanasieva and partner Viktor Krizma. What Now San Antonio briefly spoke with Krizma about the fifth edition of the brand. Krizma confirmed the opening, but was unable to share additional details by the time of this publication.
Founded in 2020, Laika Cheesecake & Espresso grew from a startup to a local staple beloved for its bold flavors and varied cheesecakes in slices. The Ukraine-born founder named the establishment after the first Soviet space dog. Though the brand is known for its signature cheesecakes-in-a-jar, the bakery gives more to its community than sweet eats. Laika gained national attention in 2022 by donating over $72,000 in weekend profits to support the Ukrainian armed forces.
Laika Cheesecake locations currently operate in Alamo Heights, New Braunfels, off of W Loop 1604 N., and, more recently, Helotes.
Laika Cheescake is anticipated to open inside the TPC Retail & Office at 2230 TPC Parkway, Suite 1103, by this winter.
