Carrot Express is bringing another healthy dining option to the heart of Brickell with a new location set to open this fall at 1057 Brickell Plaza.

The 1,362-square-foot fast-casual restaurant will feature seating for 52 guests, including 32 indoor seats and a 20-seat outdoor patio. The new outpost continues the Miami-based brand’s steady expansion as demand for fresh, health-focused dining continues to grow in South Florida.

Founded in Miami Beach in 1993 by Mario Laufer, Carrot Express began as a small eatery serving wholesome, made-from-scratch meals at a time when healthy fast-casual concepts were virtually unheard of. Laufer’s vision of combining nutritious ingredients with bold flavors has helped transform the restaurant into one of South Florida’s most recognizable healthy dining brands.

Today, Carrot Express operates more than 30 locations across South Florida and New York City, offering an extensive menu of salads, grain bowls, wraps, sandwiches, smoothies, fresh juices and all-day breakfast items. The company has continued to expand while maintaining its focus on natural ingredients and accommodating a variety of dietary preferences, including vegetarian, vegan and gluten-friendly options.
