Tokyo-style Neapolitan pizza is making its Miami Beach debut this October with the opening of Royale Pizza Napoletana.

The 65-seat fast-casual restaurant, located at 1680 Meridian Avenue, is the brainchild of Miami entrepreneur and restaurateur Jess Varughese, founder of the exclusive members-only dining concept Haiku. Royale will introduce the region to the meticulous Tokyo-style interpretation of Neapolitan pizza, featuring the expertise of Japanese pizzaiolo Chef Bun, founder of Tokyo’s Savoy pizzeria.

Founded in Tokyo in 1995, Savoy has earned an international reputation for its highly technical approach to pizza making, helping spark Japan’s Neapolitan pizza movement. Chef Bun’s pizzas have attracted food lovers from around the world, and Royale marks his first restaurant collaboration in the United States.

Executive Chef Albert Diaz, formerly of Zuma London and Zuma Miami, joins the project alongside acclaimed pizzaiola Dalila Sabatino, while veteran hospitality executive Oscar Coll will oversee operations.

Guests can expect a streamlined menu of antipasti, handcrafted pizzas, pasta and entrées served in a polished, walk-in-only setting. The restaurant’s signature dough undergoes more than 30 hours of fermentation and is baked in an 800-degree oven using techniques refined over two decades in Tokyo.
