Cabo Bob’s has been working on its newest Greater Houston location since last May. Now the brand is inching closer towards opening. According to a recently filed permit, the new Cabo Bob’s is expected to open in Upper Kirby at 3905 Kirby Drive.
The permit further details that construction is planned to start on September 1 and is slated to wrap up by the end of December. If all goes well with permitting and the $500,00 construction project on the 4,000-square-foot space, the new Cabo Bob’s should open by this winter.
The new eatery is taking over the former home of Taco Cabana, which closed in early December last year. The sudden shuttering was part of a larger, quiet mass closure of Taco Cabana locations across the Houston area.
At the helm of the new Cabo Bob’s opening in Upper Kirby are founders Don Brinkman, Terri Brinkman, and Chef John Stepan. The three founded the brand in Austin, Texas, in 2008. Inspired by surfing trips to Baja California, the name originated from a laid-back, “stress-free” character archetype.
Cabo Bob’s is best known for its “born in the Baja, raised in Texas” culinary philosophy, which focuses on build-your-own, oversized burritos, tacos, nachos, and bowls made with high-quality, preservative-free ingredients. There are now 11 Cabo Bob’s operating across Texas, with six in the Austin metro area, four in the Greater Houston region, and one in San Antonio.
What Now Houston reached out to co-owner Terri Brinkman to find out more details about the upcoming opening. Unfortunately, we did not hear back by the time of this publication.
“This restaurant was created to honor the spirit of Cabo Bob. We all know someone like him. Knowing that most of us can’t live like Cabo Bob, we hope you come to think of this as a great spot where you can come in and get the best Burritos and Fish Tacos in a stress-free environment—except for the cooks, we like to keep them busy,” the Cabo Bob’s website reads.
“The best places to camp, the best fishing, the best surfing, and most importantly, the best places to eat. With this idea as our guidepost, we have dedicated ourselves to finding the highest quality ingredients to go into our burritos, tacos, salads, and bowls.”
