Hunter’s Bagels Brings a Family Bagel Tradition to Cornelius

The new Cornelius shop will serve fresh bagels alongside breakfast sandwiches, deli favorites, coffee and baked goods

Hunter’s Bagels is preparing to open in Cornelius at 19905 W Catawba Ave, bringing a new bagel-focused breakfast and lunch concept to the Lake Norman community. A recent post from Lake Norman Home Experts highlighted the upcoming shop as part of new activity on the east side of Lake Norman, noting that Hunter’s Bagels will serve fresh bagels, breakfast and lunch sandwiches, and coffee. Hunter’s Bagels’ website currently lists the Cornelius location as coming soon.

The concept is owned and operated by brothers-in-law Brandon Kurz and Andrew Roth. According to Hunter’s Bagels, Kurz brings a business background to the venture, while Roth is a restaurateur with more than a decade of food-industry experience. The two owners also grew up in families that operated a bagel shop, making the new business a continuation of a longstanding family tradition.

The inspiration for the name came from Kurz’s son, Hunter. The owners say Roth began making fresh bagels for his nephew, which helped inspire the family to bring their shared bagel tradition to Cornelius. The shop will prepare its bagels by boiling and baking them before serving them warm.

The menu will extend well beyond the bagel counter. Current offerings include traditional varieties such as plain, everything, sesame, poppy, garlic, onion, cinnamon raisin and blueberry, along with options including Asiago and jalapeño cheddar. Customers can pair the bagels with several schmears, including scallion, vegetable, hummus, lox spread, maple bacon, Nutella, strawberry and honey almond.

Breakfast will include egg sandwiches such as The Hunter, made with two scrambled eggs and Boar’s Head cheese, and The Buck, which adds a crispy hash brown. The menu also allows customers to customize sandwiches with ingredients including bacon, ham, sausage, avocado, mushrooms, peppers, spinach and tomato.

For lunch, Hunter’s Bagels will offer deli-style sandwiches featuring turkey, ham, salami and roast beef, along with a turkey club, BLT, grilled cheese, chicken salad, tuna salad, egg salad, vegetarian and Nova lox options. Salads include Caesar, Greek and chef varieties, while French toast, Belgian waffles and a yogurt parfait provide additional choices.

The bakery selection will include cookies, muffins, cinnamon rolls and crumb cake, while the beverage program will feature hot and iced coffee, espresso, lattes, hot tea, fresh juices, Dr. Brown’s, Coca-Cola products and bottled water.

Hunter’s Bagels has not announced an opening date for the Cornelius location. The company is currently collecting email sign-ups for opening updates and continues to identify the location as coming soon.
