Cooper’s Hawk Winery & Restaurant plans a new location at Gates of Prosper, Block B, Lot 3B, Building 1, Prosper, according to a project registration filed with the Texas Department of Licensing and Regulation identifying the project as new construction.

According to the TDLR filing, the project will involve ground-up construction of a freestanding, one-story restaurant. The planned building will be 12,111 square feet, plus a 652-square-foot service yard and a 1,150-square-foot exterior patio, for a total project area of 13,261 square feet.

According to the company’s website, Cooper’s Hawk combines a modern casual restaurant, full-service bar, private dining room, and Napa-style tasting room and retail marketplace. The company was founded in 2005 by Tim McEnery, who remains its CEO.

The restaurant’s menu is built around contemporary American dishes with flavors from different regions. According to the company, its culinary team prepares the menu in a scratch kitchen using seasonal ingredients. The restaurant also operates a winery and produces wines from grapes sourced from locations including California, Chile, France, Italy, New Zealand, and Australia.
