This month, Wynn Las Vegas will launch Casa Playa, a restaurant serving coastal Mexican cuisine in the space formerly occupied by Elio, which closed in November, 2020, according to recent coverage in Eater Las Vegas.
The Casa Playa experience represents a confluence between former Elio chef Sarah Thompson and her menu; assistant general manager Noah Arenstein, an agave expert who will curate the restaurants selection of mezcals and tequilas; and Wynn’s mixologist Mariena Merce Boarini.
The menu features a variety of seafoods drawing inspiration from coastal Mexico, with choices like Baja fried fish tacos, Mexican blue shrimp, yellow fin tuna tartare, along with oysters, scallops, king crab, and lobster.
These will be paired with colorfully-named cocktails like Forbidden Fruit (El Tesoro Blanco, mango, lime, chamoy caramel, and mango trinity salt) and Temple of Doom (Mal Bien Espadin Mezcal, grilled pineapple, chipotle, and lime).
What Now Las Vegas was unable to reach chef Sarah Thompson for comment.
