PowerSoul Cafe, the world’s first all gluten-free fast-food chain, is set to open its flagship location in Southwest Las Vegas. The healthy food and smoothie cafe will open in Tarkanian Plaza, located at the intersection of West Warm Springs and Cimarron Road, next year.

The Tarkanian Plaza location will operate as the main kitchen hub for future local sites, which are currently in their planning phases. Each location will be open 24-hours, with self-serve smart food lockers, walk up windows and a drive-thru window. A total of seven locations are anticipated in the same year.

In a phone conversation with What Now Las Vegas on Tuesday afternoon, Mitchell expressed excitement at having found what she considers the perfect Las Vegas location for the chain’s flagship, emphasizing the plaza’s accessibility and a strong relationship with the landlord.

“Having fifteen years’ experience in the industry, you put a lot of pressure on yourself. You want to do it right the first time,” she said, detailing a long search for the ideal spot, a search that involved the sending out of more than 30 letters of intent and, eventually, a long negotiation concerning the Tarkanian Plaza location. “It’s on two major streets, but it’s not so busy that you can’t get back on your path. There’s a hospital nearby. There’s a school nearby. A new park is opening there soon.”

The only thing that could be more perfect, Mitchell said, would be if the restaurant could open sooner. No solid date has yet been announced, but the chain’s flagship is expected to open in the summer of 2022.

Each item on the PowerSoul Cafe menu is certified 100 percent gluten-free. There will be choices for both meat-lovers and plant-based diners, along with those following dairy-free or keto diets.

The menu will include smoothies, organic veggies, nutritious supplements, gluten-free items and vegan items. A kids’ menu is also available, featuring such as corn dogs and crispy chicken nuggets. Breakfast items will be served all day.
