  • The facility did not have a knowledgeable person in charge capable of implementing procedures to ensure food safety and compliance with regulations.
  • A spray bottle of degreaser was seen stored in the handwashing sink. This is the second consecutive repeat of the same code provision. As a corrective action, the person in charge removed the degreaser, and Environmental Health staff educated employees on proper use of the hand sink.
  • Raw chicken was observed stored on the same shelf as raw beef, raw shrimp, cooked chicken, cooked rice, and vegetables. Raw chicken was also kept below the vegetables. The person in charge rearranged the walk-in cooler to ensure proper food storage.
  • The report noted that food items, including raw chicken, appetizers, and vegetables, were found stored uncovered in reach-in coolers and the walk-in cooler. It was noted as a second repeat violation. The person in charge covered the food items.
  • Three containers of rice prepared the day before the inspection were observed in the walk-in cooler at temperatures between 48°F and 50°F. The food was discarded.
  • Chicken wings that were placed under time-control procedures the day before. The wings were discarded, and Environmental Health staff educated the person in charge on proper time-control procedures.
  • Several food items, including cooked rice, cut tomatoes, prepped jalapeños, and coleslaw, lacked preparation or discard dates. The affected food item was discarded.

  • Several containers of rice cooked the day before the inspection were found stored in large containers with tightly fitted lids, preventing proper cooling. The Environmental Health staff educated the person in charge on approved cooling practices.
  • Utensils were seen stored with handles submerged in food products, including cooked rice and sugar. This is the second consecutive repeat of the same code provision. The utensil handles were removed from the food products
  • The report mentioned that the back door of the facility was left open. The person in charge closed the door as a corrective action.
