A Duluth restaurant was able to make a comeback from a health inspection failure on March 25. The restaurant scored only 60 points and failed the Required Additional Routine inspection that was conducted on March 19. Following this incident, inspectors visited the restaurant for a follow-up inspection on Tuesday, March 25, in which it performed well.

Chung Dam in Duluth successfully passed the follow-up health inspection with 82B grade. Inspectors identified three violations during the inspection, one of which remains to be resolved. The report stated that another informal inspection will occur at the establishment on April 4, 2025.
The first violation that was reported was that a pitcher and a steel scourer were seen in the handwashing sink. Another sink in the prep room had food debris and a steel scourer.
In an instance of improper food storage observed, raw beef was seen stored above salad dressing and ready-to-eat cabbage in the upright cooler. There were also raw fish placed on top of ready-to-eat kimchi in the walk-in cooler, and raw chicken was stored above raw beef in the prep room’s two-door cooler.
The issue that was not corrected onsite during the inspection was in the case of the back door which had visible gaps on the right side when closed, creating a potential entry point for pests.
The report went on to say that the New Rules Checklist was reviewed with the person in charge. It also said a Pest Control was performed by Cook’s pest control at the establishment and it had another treatment scheduled for March 26. The Required Additional Routine inspection was held at the restaurant due to a previous unsatisfactory score. The inspection had unveiled multiple violations at the establishment.
The report began by mentioning the person in charge’s failure to demonstrate managerial control and lack of knowledge of the employee health policy, followed by other issues. Among the improper food storage issues observed, raw meats and seafood stored were seen places above vegetables and ready-to-eat items. Several time/temperature violations were also noted, including improper storage of mussels, squid, tofu, beef, and rice.
A can of Raid insect killer was found under a food cooler, marking a repeat violation. Additionally, unpackaged seafood and meat were stored in water, which was also a repeat violation. Live insects were seen in multiple areas, and the back kitchen door failed to self-close.
Corrective actions were taken, including discarding unsafe food and rearranging storage. The report stated that a third consecutive violation would result in permit suspension. In addition to the follow-up inspection that has now been completed, the restaurant will also face a required additional routine that will be performed within the next twelve months.
Chung Dam improved its health inspection score in the latest inspection. The restaurant will now have to keep ensuring compliance with the food code so that it can retain its permit and keep serving its guests.
