Japanese Restaurant in Metro Atlanta Scored Unsatisfactory in Recent Health Inspection

A routine health inspection was conducted at Hokkaido Ramen House in Dacula on October 20. Inspectors from GNR Public Health reported multiple food safety violations at the restaurant, leading to a low score and grade.

Hokkaido Ramen House has been serving Japanese cuisine in Dacula for 20 years. Founded by Chef Takashi in 2005, the restaurant uses fresh ingredients and traditional recipes. During the recent health inspection, the following food safety violations were noted:

  • The facility lacked active managerial control.
  • A second consecutive violation of drinks in unapproved containers was observed, which were stored on the prep counters throughout the kitchen and sushi bar.
  • An employee was found eating at the sushi bar.
  • During the inspection, the hand sink in the dishwashing areas was blocked by the same large trash can.
  • Food was not properly stored to prevent contamination in coolers, freezers. Unwashed produce was stored above ready-to-eat food.
  • The report mentioned that sushi rice was not under time control; the start & discard time was not marked. Food on time control exceeded the allowed four-hour limit, and the restaurant did not provide written procedures.
  • Multiple containers of food and sauces were unlabeled throughout the kitchen and cookline.
  • Food was stored on the floor in the freezer and storage room.
  • Food containers were stacked wet, nested on the storage shelves. The inspector asked employees to wash the containers again.
  • The report also states, grease and debris buildup on the cookline equipment. Old residue was observed on non-food contact surfaces of containers and requires cleaning.

Many violations were corrected on-site, while the rest are expected to be completed before a follow-up inspection. The restaurant is required to eliminate all the violations as a follow-up inspection is expected within 3 – 10 days.

A satisfactory score will be issued once the follow-up inspection is successfully completed. In case of repeat violations or failure to address current violations, the restaurant might have to face permit suspension.
