The Duluth food establishment showed a lack of managerial control, with employees not aware of their responsibilities concerning foodborne diseases. Raw, ready-to-eat fish items were kept beside fruits and vegetables at Sweet Hut Bakery and Cafe. Improper storage of cooked and frozen items, such as animal foods, also led to cross-contamination.
Inspectors observed uncovered food containers in coolers and freezers at the bakery and cafe. The facility was cited for a second consecutive violation involving TCS food items, including grilled onions, held above 41°F. Inspectors also noted heavy ice accumulation on the coolerās back wall.
Employees at the Duluth establishment wore bracelets while handling exposed food items. Other personal items, such as hair clips and employee drinks, were stored above food items on rolling carts. For a second time, the food facility was found to be stacking wet containers.
The on-site inspector discussed cleaning and sanitizing procedures for the dining table at Sweet Hut Bakery and Cafe. The cafe was instructed to store employee drinks in single-use cups with a secure lid. Broken fan covers were also asked to be replaced before the next routine inspection.
