The restaurant specializes in chicken wings, tenders, and hibachi-style dishes.Ā Food inspectors of the Gwinnett, Newton & Rockdale County Health Departments, however, observed many health violations at the eatery. Based on the nature of violations, they offered it a score of 51 and a āUā grade on Monday.
Inspectors noted the person in charge (PIC) was not present during the routine inspection.Ā The inspection report cited poor managerial oversight of food safety procedures.Ā Employees at the chicken place were working in the kitchen without using gloves or washing their hands.
The report stated that employees lacked knowledge of standard food safety rules. They were eating and drinking in the food prep area of the chicken establishment.
The inspectors from the county departments listed multiple food storage issues at Fire Wings and Hibachi, which led to cross-contamination. Eggs were stored above produce in the walk-in cooler. Unwashed mushrooms were placed over lettuce at the chicken food facility. The report noted spoiled items and cross-contamination between fruits and vegetables.
Further, repeated violations were observed, including uncovered fish in a stand-up cooler. A mold-like substance was seen on drink machine nozzles at Fire Wings and Hibachi. Chicken wings were held without proper time control procedures.
The inspection report highlighted that employee items, such as cellphones, were found in the food prep area of Fire Wings and Hibachi.
Follow-up Inspection
According to the report, the follow-up inspection will take place within 10 days. An additional routine inspection will be conducted within 12 months.
Health officials scheduled a follow-up inspection to ensure compliance. If cited for violations, corrective measures should be undertaken to avoid a permit suspension.
