The GNR County Health Departments conducted a routine health inspection on Wednesday, May 28, 2025. During the inspection at the Japanese restaurant Oystra Seafood Kitchen, several health code violations were discovered. Among these, a third consecutive violation of the same code was also found, resulting in the suspension of the restaurant’s permit.

According to the health report, several violations were a result of an overall lack of managerial control by the person in charge (PIC). The PIC did not demonstrate an understanding of food safety, nor were they able to prove the employees’ awareness of health policy.

Inspectors found additional issues with the restaurant’s handwashing stations. In the back kitchen, one hand sink did not have soap, while the other hand sink was inaccessible. Another hand sink by the bar also did not have soap. 

Sanitary violations discovered at the facility include the buildup of debris in two different ice machines, and certain utensils were stored in water below 135°F. It was also found that the back door of the facility was propped open, potentially allowing pest infestations.

Inspectors also noted food safety issues during the health inspection. The inspector noticed a lack of a parasite letter of destruction for sushi fish and fish that are served uncooked. Food items were not properly stored in the upright freezer. Meanwhile, eight bags of sushi rice were on time control but did not have labels with start and end times on them. The third consecutive violation of the same code was that the shellstock tags were missing for oysters served on the half shell.

Follow-Up Inspection

A follow-up inspection will be conducted within 10 days to ensure that corrective actions have been taken against all the violations noted in the report. Due to the third consecutive violation of the same code, on-site training will be conducted to ensure the violation is not repeated. Only after the completion of the training will the permit be reinstated.
