  • The report cited insufficient managerial control. The person in charge must ensure compliance with food safety codes through active oversight.
  • An employee was seen disposing of water containing food debris in a handwashing sink. The sink was cleaned, and the staff was retrained.
  • The facility did not have proper disinfectant for norovirus and written procedures for handling vomiting or diarrheal incidents.
  • Unwashed produce was placed above ready-to-eat items, and raw ground beef was placed over soup. Food items were rearranged to correct storage practices.
  • Not all TCS foods were properly labeled or managed under time control procedures, according to the report.
  • Multiple containers of margarine-based liquid were found without labels.
  • The report noted that catfish was thawing above safe temperatures, and salmon was thawed in reduced-oxygen packaging.

  • Sanitizer buckets had a concentration below 50 ppm. The solution was remade to meet the required standards, the report said.

  • Clean containers and utensils were stacked while still wet. Items were rewashed and stored correctly.
  • The report said that the back door was left open and was not self-closing.
