The Dacula restaurant, Speedy Burrito Mexican Food, faced a health inspection between 3:15 PM and 6:20 PM on Monday. The inspection report for the restaurant listed the various violations and also mentioned additional instructions.
The report began by stating that the person in charge was not properly enforcing food code rules or maintaining managerial control over the facility operations.
Cross-contamination risks were observed as raw tilapia was stored above ice cream and fries, raw chicken was stored above raw beef, and unwashed corn was stored above cut lettuce. As a corrective action, the foods were rearranged based on proper cooking temperatures to prevent cross-contamination.
The report noted an improper cooking method as partially cooked beef was not stored in compliance with approved procedures for non-continuous cooking. The beef was discarded as a corrective measure.
The cold food storage was also not in compliance, as several food items were seen held above the safe cold temperature of 41°F. As per the report, the unsafe foods were discarded.
Diced tomatoes and shredded cheese didn’t cool down to 41°F within the required 4-hour window, the report noted as a second consecutive violation. These items were discarded as well.
Flan and ham were kept past the allowed 7-day limit after preparation or thawing, marking another violation. The expired items were discarded as corrective action.
A cooler was holding food at temperatures above 41°F, the report pointed out. The cooler will need to be repaired to maintain safe temperatures.
The additional comments section stated that all employees must wear clean hair restraints such as nets or caps to cover loose hair, including beards and mustaches longer than half an inch. It was also noted that non-continuous cooking sample procedures were provided to the PIC.
Follow-up Inspections Scheduled
As per the official inspection report, Speedy Burrito Mexican Food will face a follow-up inspection within 10 days. The team at the restaurant must ensure that all violations are corrected before the follow-up, failing which it may face permit suspension.
The restaurant will also face an additional required routine inspection within 12 months. The report also stated that a third consecutive violation of the 6-1 C, with regard to the cooling of food items, may result in permit suspension as well.
A total of 22 food service facilities were inspected on Monday, May 12. Six facilities scored a perfect 100, ten scored between 90 and 99, three scored between 80 and 89, and one facility received a score of 73. The inspections included 20 routine inspections, one follow-up, and one additional required routine inspection.
