The health inspection team observed critical violations at Honey Creek Wings, resulting in a low score of 37. Inspectors noted the person in charge was not present at the start and did not demonstrate active managerial control.

The inspectors observed multiple critical risk factor violations and pointed out that the person in charge could not name all of the major food allergens.

In a corrective action, the person in charge was provided with an allergen poster and educated on cross-contact prevention. The report noted that an employee walked into the kitchen, put on gloves to handle a bowl without first washing his hands.

The person in charge was unfamiliar with the restaurant’s employee health policy and could not provide documentation for the same. Inspectors reported that the employees’ drinks were stored on the prep top table in the main kitchen when they should be kept separate from the food preparation area.

It was also reported that the hand-washing sink in the kitchen did not have a cleanser available. Inspectors observed handwashing at both the three-compartment and vegetable sinks. Inspectors pointed out that hands should be washed only in the hand sinks.

It was reported that unwashed produce was stored with and above ready-to-eat food. Health inspectors also saw packaged frozen raw chicken stored directly on top of ready-to-eat foods. The ice machine had a mold-like buildup.

The health inspectors observed cold held TCS foods kept with an internal temperature greater than 41 degrees Fahrenheit in the preparation top cooler. The food had been held for more than four hours above the recommended 41°F limit for TCS items, according to the report.

The report also observed that food bottles that did not have a label and employees prepared food without hair restraints. Old food debris was built up on the side of the fryer, two small reach in coolers, and fry baskets. Inspectors also reported the presence of flies in the kitchen and dining area.

Follow-Up Inspection

While many violations were corrected by the employee at the time of inspection, the health inspectors warned the restaurant to follow up on other noted violations. A detailed health inspection report of Honey Creek Wings is available online.
