Former Tomo chef is planning a fast-casual Japanese-inspired eatery.

Yesterday, The Cowfish announced it will open next month. However, if sushi burgers and burger-inspired sushi rolls aren’t quite your thing, you may be excited to hear that another sushi-oriented eatery is in the works.

“] is filing plans this week for a new restaurant next to Aladdin’s at Emory Point, in a street-facing unit.

BoruBoru Sushi Burrito + Bowl will be a “pure fast-casual” Japanese-inspired eatery.

The restaurant will serve, of course, sushi burritos and sushi bowls as well as poke bowls. Some of the protein offerings will be hanger steak, boruboru chicken, and pork belly.

“It won’t be completely authentic because my culinary background is rather diverse,” Noe told What Now Atlanta in a phone conversation Tuesday morning.

He also mentioned that the restaurant will have a zero-tipping policy. He is interested in serving beer and sake as well.

The eatery will be open seven days a week for lunch and dinner – same menu, same prices.

He has extensive training in Japanese cuisine. Years ago, he was a chef at Tomo Sushi in Buckhead. For the past 3 years, he has been living in Los Angeles where he co-founded and serves as the chef at M.Y.O. Sushi. The “M.Y.O.” stands for “Make Your Own.”

The restaurant is in very early stages of planning, but Noe has hopes of running a catering service out of BoruBoru Sushi Burrito + Bowl one day.

He is aiming for a mid to late summer opening date.
