June 5 was the first day in business for the Asian-fusion eatery.

CO restaurant, an eatery offering “a modern take on traditional Southeast Asian cuisine,” Monday opened its Poncey-Highland doors, according to a press release June 5.

The restaurant, at 675 N. Highland Avenue NE, is starting with dinner service through Thursday, June 8 with lunch beginning on Friday, June 9.

Japan-born Executive Chef Masanori Shiraishi is leading the kitchen in CO Restaurant.

Menu highlights include Curry Laksa with shrimp, shredded chicken, bun rice noodles, shredded cucumber, Thai basil, baby bok choy, & spicy coconut broth; Banh Mi with sautéed lemongrass & garlic; and Beef Pho with rare beef, rice vermicelli, bean sprouts, cilantro, Thai basil, scallions, hoisin & Sriracha.

CO Restaurant’s beverage program will roll out later this month including a traditional selection of sake offerings plus sake infusions made in-house with fruits and herbs, and toppings for Boba tea range from lychee jelly to bursting kiwi boba.

The space utilizes raw materials like exposed brick and reclaimed wood with floor-to-ceiling windows and an outdoor patio.

CO Restaurant, founded in 2012 by Greg Bauer, has locations in Charleston, Savannah, Charlotte, and Myrtle Beach.
