Something new, fried and customizable is coming to Woodstock.
Wild Fryz is planned for Adair Park at Downtown Woodstock, a mixed-use community featuring restaurants, retail, office space and homes.
The gourmet build-your-own-fries concept comes from Canadian native Thomas Cantley, who spent 18 years in film production before pivoting back to his passion for food and cooking. Cantley is a finalist for Favorite Chef in the online Fav Chef competition.
At Wild Fryz, fries aren’t just a side dish; they’re the main event. The concept will serve customizable fries that cater to a wide range of dietary preferences. Up to 90 percent of the menu will be gluten-free, Cantley told What Now Atlanta.
Customers will be able to choose not only what type of fries they want (like regular potato, sweet potato and more), but also how they are cooked (in duck fat, beef tallow, avocado oil or air-fried). A variety of proteins, toppings and sauces will also be available.
Among the varieties that Cantley has crafted: chili cheese fries (featuring crispy cheese-stuffed steak fries wrapped in bacon, smothered in homemade bean chili and slow-cooked pork brisket chili, then topped with shredded cheddar, tangy kimchi and crunchy BBQ corn chips) and chicken tinga mac and cheese fries (featuring garlic parmesan waffle fries, smoky chipotle mac and cheese, chicken tinga, pico de gallo and homemade crema ranch).
Wild Fryz is also partnering with Reformation Brewery on a beer that will be served there.
The concept aims to be sustainable and eco-friendly, part of which involves opening in a shipping container space that is undergoing buildout now. It will be located off a greenspace, featuring some outdoor seating for those who want to enjoy their epic fries onsite.
