Founder of The Boiler Seafood plots seven new restaurants

The founder of Buckhead’s The Boiler Seafood Atlanta plans seven new restaurants around the city.

Chad Dillon in September announced he was launching his own restaurant company, Privilege Restaurant Group, according to an announcement

Now, he is plotting an aggressive expansion. 

Dillon will open a new location of JJ Fish & Chicken near The Varsity. The restaurant will come to 610 Spring St., he said in a phone interview.

Dillon, 32, will become the youngest franchisee owner of a JJ Fish & Chicken and the first African-American owner, according to an announcement

He hopes to open within the next three months. 

“It’s a staple of the community in Atlanta,” Dillon said of restaurant chain. 

He also plans six new concepts: Stix Asian Fusion Cuisine, Sugarbaby Rolled Icecream, Sugarcane Caribbean Cuisine, Shisha Speakeasy & Hookah Lounge, Hibachi Hibachi Foodtruck and Vegan Me, according to the announcement.

Dillon said he has signed leases for the restaurants, with the goal of opening them all in the next six months. He plans to open in areas including Buckhead, Midtown and downtown. 

“I’m focused on opening restaurants people want,” he said. 

His next focus is to expand his restaurant company to provide foodservice for hotels, colleges and hospitals.
