Local brunch concept, Two Eggs, has big plans for 2023, including a new outpost at 830 Hwy 138 SE in Stockbridge that’s slated to open this July or August, followed by a relocation effort that will see its flagship restaurant in McDonough move about a mile and a half down the street to the forthcoming Shops at Walnut Creek development, located at 2400 Jonesboro Rd later this year, according to co-owner Richard Penny.
Penny says that construction on the Stockbridge location should kick off in about two or three weeks. Meanwhile, after construction wraps up on the Shops at Walnut Creek center in Q3 of this year, they’ll begin the process of moving in and there should only be about a week of downtime between closing one Jonesboro outpost and opening the other.
Penny, who owns Two Eggs with his wife Monika, says the brand intends to open five locations before launching a franchise effort. Given that the second opened in Conyers about five months ago, Stockbridge will bring the total to three.
“We’ve done really well where we’re at, and actually people out here in Conyers have really welcomed us with open arms,” Penny tells What Now Atlanta. “We’re just trying to give people what they’re missing being out in the suburbs. We’re more like a city-style breakfast and lunch restaurant, but we’re out in the suburbs.”
The menu at Two Eggs consists of classic brunch favorites such as the Breakfast Club sandwich made with bacon or sausage, two eggs, cheddar cheese, spinach, and tomatoes on Texas toast, German-inspired Dutch Baby pancakes topped with strawberry and bananas or lemon curd and blueberries, various Eggs Benedict creations, Corned Beef Hash, and Shrimp & Grits.
Two Eggs first opened in October 2019 and was inspired by the Penny’s three sons, as well as their love of mom-and-pop restaurants. Writing on Two Eggs’ official website, the couple explains, “Breakfast is the most important meal and gathering of the day for the family. Growing up, neighborhood friends of the boys were surprised by the way the Pennys gathered and enjoyed meals together as a family.”
As a result, “Two Eggs was created to instill and share family traditions with the community through the restaurant environment and ambiance.”
