Try House-Made Corn Tortillas at De Allende Mexican Kitchen This August

Owners of the forthcoming eatery in The Outlet Shoppes at Atlanta will use nixtamalization on its corn.

De Allende Mexican Kitchen and Tequila Bar in the first week of August will open in Woodstock’s The Outlet Shoppes at Atlanta.

The restaurant will serve “traditional Mexican cuisine” including house-made corn tortillas, Paloma Fuentes, De Allende Mexican Restaurant’s co-owner Thursday told What Now Atlanta in an email.

“We will be producing our corn tortillas from organic, non-GMO corn grown in Mexico,” Fuentes said.

The restaurant will use the “ancient process of Nixtamal” on its corn.

“Nixtamalization will produce a better tasting tortilla and a more nutritious one than your
average.”

Nixtamalization is the preparation of corn whereas the corn is soaked and cooked in an alkaline solution like limewater, and then washed, and hulled, according to Wikipedia.

The process removes nearly all of the aflatoxins from mycotoxin-contaminated corn.

Fuentes and her team will also offer a variety of Mezcal cocktails using “freshly squeezed juices.”

The Outlet Shoppes at Atlanta, at 915 Ridgewalk Pkwy, is home to restaurants like Taqueria Tsunami, Johnny Rockets, and Little Tokyo.
