Fogonero is a restaurant that offers Venezuelan comfort food in Pflugerville, an Austin suburb. It serves breakfast, lunch, and dinner and also offers catering services.
Violations Cited
During the health inspection on June 9, the inspectors who visited the restaurant reported that it didn’t have written instructions for staff on what to do in case of a vomiting or diarrhea incident. An employee was observed wiping their nose and continuing to work without washing their hands.
It was noted that one handwashing sink lacked paper towels. Another hand sink was blocked and unusable.
The report noted that some utensils and equipment, such as a knife and salad spinner, had food debris on them. Sponges were found being used improperly. A container of sanitizer was found stored on the floor.
Hot food was found being held below 135°F, while cold foods were kept above 41°F for more than four hours.
Some food items were not properly date-marked, and raw or undercooked menu items were not marked with an asterisk.
Inspectors found fly tape hanging over a prep surface. Inspectors observed cling wrap being used as part of a scoop and cardboard lining equipment. Single-use containers were being reused.
One cooler did not have a thermometer in its warmest section, and two coolers were not functioning properly. The bottom of a walk-in cooler was dirty.
A pipe under the triple sink was broken, and the sink was not draining correctly, causing sewage issues.
Inspectors noted sanitation concerns in the outdoor waste area. Inspectors also noted clutter, unnecessary items inside the restaurant, and exterior openings that could allow pests to enter.
Corrective actions were taken or prescribed for each violation. The restaurant must address all issues before the follow-up inspection.
Reinspection Scheduled
One restaurant in Pflugerville received a score below 70 during a routine inspection and will face a reinspection. The inspection report indicated that the reinspection must occur by June 23, 2025, and the restaurant must pay the reinspection fee before then.
If Fogonero fails to score above 70 in the follow-up inspection, a criminal complaint for violating the Texas Food Establishment Rules will be filed in court. More severe actions may be taken if the restaurant scores below 70 again within the next 36 months.
