Founded by Rebecca Seiler and Spencer Brown, Foodie & Tina has been offering sustainable sushi as a pop-up since 2024, and in that time, it has built up a following that will soon launch it into its first brick-and-mortar location.
“We’ve been popping up around town, and we wanted to find a place to call our own,” Seiler told What Now on Friday.
That place will open at 2153 South Lamar Blvd this June, offering (according to coverage by the Austin American-Statesman) “omakase boxes and rice bowls to go… The core format revolves around omakase boxes with 10 pieces of nigiri and a chef’s choice roll, along with chirashi and kaisendon bowls and a vegetarian option.”
Foodie & Tina’s karashi bowls and sushi boxes will be grab-and-go, but a standing hand-roll bar with standing room for a handful of guests will also allow for some quick dine-in, featuring “made-to-order rolls finished with ingredients like Texas persimmon miso or wasabi butter,” the American-Statesman writes.
“I think we’ve built a strong little community here in Austin, and we feel really lucky to have had the reception we’ve had,” Seiler said. “We’ve also gotten so much support from other restaurant and bar owners, and we’re really grateful to the Austin restaurant community for supporting up-and-coming people.”
Above all, Seiler said, the idea was to come up with a format that made the brand’s environmentally conscious business practices feasible.
“We want to prioritize sustainability—to have a counter-service business model where we have the margins to accommodate fair wages and benefits to the staff and source sustainably.”
