Located at 3300 Bee Cave Road, Suite 110, in West Lake Hills, Baldinucci Pizza has been building a following with its Roman- and New York-style pizzas. This year, the family-owned and -operated business, which is headed up by Salvatore Baldinucci, his wife Patricia, and his twin brother Gabriel (plus Baldinucci’s three children), is preparing to expand to a second location. It’s opening at 11501 Rock Rose Ave, Suite 146.
What Now spoke on Wednesday with Salvatore Baldinucci, who has been in the pizza world for 42 years, about Baldinucci Pizza Romana and its plans for the future.
“We’re looking at spring for an opening,” Baldinucci said. “We just passed our third year—we opened in 2022—and it’s been good. It’s lot of hard work. The restaurant industry in general is hard work.”
After several decades in the pizza world, Baldinucci had entered into semi-retirement when his brother Gabriel visited Austin and found what he considered to be a lack of pizza.
“My wife and I had just sold our last place in 2018, and my twin brother told me, hey, there’s really no pizza here. And we came and saw that there weren’t a lot of the kind of pizzerias we were used to.”
This time around, with Baldinucci Pizza Romana, the family took a different approach, offering a Roman-pizza style they hadn’t worked with before.
“We combined our family legacy, our culinary influences, experiences from around the world, and fresh, local ingredients to bring you a modern version of Roman style pizza that blends food and art,” says the restaurant’s website. “We share the inspiration behind each creation and provide an elevated pizza experience that is delicious, healthy, sustainable, and convenient.”
And if what you’re looking for is an old fashioned New York-style pie, you’ll find that at Baldinucci too.
“I told my brother, we have to do New York pizza, too. It’s what I do,” Baldinucci said. “And that’s why we have two styles, and some people prefer one or the other.”
Either way, there’s something for everybody. There are Vegetarian pies like the Nonna (Mozzarella, fresh crushed tomatoes, fresh garlic, grated Romano cheese, oregano, fresh basil, extra virgin olive oil) and the Nonno (Mozzarella, fresh cooked Italian pomodoro sauce on top, grated Romano cheese, oregano); Meat pizzas like the classic Pepperoni, the Lasagna, and the Polpette; and even a selection of vegan varieties like the Fig & Arugula and the Bruschetta.
