Blue Corn Harvest Bar & Grill, the popular local Tex-Mex eatery, will soon begin construction on a new Round Rock restaurant, according to recent public records. The restaurant will be located at 2980 Joe Dimaggio Blvd, near eateries such as The Kenney Fort Pub and Misaki Ramen.
“We believe there’s a great opportunity for the restaurant to do well in this part of Round Rock,” Chef and Managing Partner Carlos Manzano tells What Now Austin. “We have always liked growing alongside the community, and this part of Round Rock is just starting to take off.”
Those unfamiliar with Blue Corn can imagine it as a full-sized Tex-Mex eatery, replete with a full bar and a robust menu of classic offerings, with the ambition to stay tied to local roots.
“We have a lot of traditional plates that have been on the menu for a long time and have sold well,” Manzano says. “Like the 512 Enchilada, for example, which is filled with pulled pork cooked in local beer, though not made with a soft tortilla, but a thin, crunchy, organic blue corn tortilla instead. It’s very Texan — with a Mexican touch.”
Given that the restaurant is in very early stages, with construction of the structure still underway, Manzano notes it will be some months until opening.
“We have estimated a November or December opening. They are still finishing the shell building, though we should receive the building in a few weeks.”
Until the Round Rock location opens its doors, readers can find three locations in the Central Texas of Leander, Georgetown, and Cedar Park.
