Cabo Bob’s Expanding to Southwest Austin — And Beyond

The new location will replace the former Taco Ranch.

According to a recent report in The Austin Business Journal, Cabo Bob’s will soon open a southwest Austin location at 5033 W Highway 290, replacing the former Taco Ranch.

“Cabo Bob’s may be expanding further as Brinkman seeks to open in the northern part of the metro,” the report adds. “The restaurant has six locations in Austin, four in Houston and one in San Antonio. Cabo Bob’s has a wide range of consumer demographics from high school students to college students and families.”

Reader unfamiliar with the brand imagine Cabo Bob’s as a Baja California-inspired Tex-Mex fast casual chain, but with standout characteristics such as having flavored tortillas, homemade salsas, grass-fed beef and being the first restaurant in the country to be entirely free of High Fructose Corn Syrup. 

Until the new Cabo Bob’s opens, readers can find the brand all across the Austin metro—including another area location in Onion Creek, set to open in 2024.
