“Exciting News Alert,” said a Facebook post published by Chef Vira, owner of La Riv Wood Fired Italian, the Italian restaurant with locations in Georgetown and Temple. “NEW RESTAURANT COMING TO GEORGETOWN TX.”
That new restaurant is called Sovian Restaurant & Cocktail Lounge, and it’s opening at 1500 Rivery Blvd., Suite 2175, with an opening expected in the next three to four weeks, Chef Vira told What Now on Wednesday.
“It’s going to be a European-style steakhouse with a cocktail lounge, focusing on very traditional dishes from the South of France and from Italy,” the chef said. “Instead of just doing the traditional American steakhouse, the idea is to bring in this traditional style of cooking, enhancing the dining experience so people don’t have to go all the way to Europe.”
The idea for Sovian—whose name combines the names of its three collaborators: So for Sonaya, Vi for Vira, and An for Anna—was born out of Chef Vira’s extensive travel in France and Italy. It will feature a dining room, a lounge area, and even a private dining room for special events, all in what the chef describes as “a very contemporary space.”
Chef Vira, who is a pescatarian, also promises lots of seafood dishes alongside the steaks.
“We have fresh fish from Europe, like Spanish octopus. And like at La Riv, we have that wood-burn glow, live fire, which brings some of that Texas flare: a great piece of meat cooked on the fire. And of course, it wouldn’t be a steakhouse without a great wine collection. We’re going to have a 2100-bottle wine cellar, a really great wine collection.”
