Chuy’s Building in Bastrop

Until the newest Chuy’s location opens its doors, Tex Mex fans can find 15 locations across the State of Texas, from San Antonio to Dallas-Fort Worth.

Chuy’s, the Austin-based Tex-Mex chain, will soon begin building a new location in Batrop, according to recent public records. The restaurant will be located at 1NEC SH 21 & FM 969.

Records examined by What Now state construction will consist of a “New building and site improvements for a Chuy’s free-standing restaurant” spanning 5426 square feet at a cost of around $1,750,000. It is set to finish by the end of June. 

Narrating the company’s origins on the official website, “Chuy’s opened on April 16, 1982 in an old, aban­doned Texas Barbeque joint on iconic Barton Springs Road in Austin, TX. There was seating for about sixty, a women’s restroom the size of a broom closet and a men’s restroom that was, well, outside.”

“Founders Mike Young and John Zapp had a vision of a fun and funky Tex-Mex restau­rant that served authen­tic and fresh food in an atmos­phere that appealed to everyone. From these humble begin­nings, Chuy’s was born.”

Until the newest Chuy’s location opens its doors, Tex Mex fans can find 15 locations across the State of Texas, from San Antonio to Dallas-Fort Worth.
