Fajita Pete’s, the growing fajita-focused Tex-Mex eatery, will soon be opening a location in West Lake Hills, according to a recent filing with the State of Texas. The restaurant will be located at 3736 Bee Cave Rd, within Suite 2, near eateries such as Poke House and Trianon.
“This will be my 5th Fajita Pete’s location, third in the Austin area,” franchisee Michael Blalock tells What Now Austin. “Our locations have been warmly welcomed by the community.”
Fajita Pete’s simple menu revolves around grilled fajitas in the form of chicken, steak, or veggies. On the side, customers can enjoy chips with queso and guacamole along with margaritas, one of the brand’s specialities.
“During the pandemic, the day after the governor allowed margaritas to go, I knew that Fajita Pete’s was going to boom.”
When asked why he chose to franchise with the brand, Mr. Blalock says “I was a fan of Fajita Pete’s before it even occurred to me to get into the restaurant business. I love the taste and the product, obviously, but the convenience of the business model stood out above all.”
Drawing most of its revenue from catering, take-out and delivery orders, Mr. Blalock explains that the brand has been wildly popular with events such as youth sports and PTA meetings, as well as business meetings and even legislative sessions at the state capitol. But how has the brand become so well-known, so quickly?
“When we open we take a lot of free food to offices, schools, chamber of commerce groups, fire stations, and police departments. Our job is to get people to try the fajitas once.”
Depending on the permitting process, Blalock and Co. anticipate to be up and running by July 2023.
